Outdoor Nut Granola

Outdoor nut granola.

The beauty of making homemade granola is twofold: you save money and you use exactly the ingredients you like. Consider this recipe a starting point – make changes as your tastes dictate. This makes a great lightweight camp breakfast with powdered milk.

Prep time: 40 minutes
Feeds: 6 crunchy granola types

4 cups of rolled oats
1 cup of nuts (walnuts, pecans, almonds, whatever)
1 cup of dried fruit (raisins, apricots, cranberries, whatever)
1 cup of dried (unsweetened) coconut
1 cup of honey

Preheat your oven to 350 degrees F. Place the oats in a 9 x 13 inch baking pan and toast them until you can start to smell that oatey smell, less than 10 minutes. Meanwhile, chop the nuts. Take the oats out of the oven and mix in the nuts, dried fruit and dried coconut. On the stovetop in a large saucepan, warm the honey to thin it. Pour the dried ingredients into the saucepan and mix with the honey. Return the granola to the baking pan and bake it another 20 minutes, until golden brown. Take the granola out of the oven and stir it several times as it cools to prevent excessive clumpage.
